homemade refrigerated olive oil spread (dairy free)

I'd like to make some dairy free spread, in small quantities. I've seen a couple of recipes using just refrigerated olive oil to make a home made dairy free spread, e.g.
pour Extra Virgin Olive Oil into a plastic container. Cover and put in the freezer until the oil is solid. Then remove it to the refrigerator where it will soften slightly so is perfect for spreading anytime, straight from the refrigerator.

I will give it a go, but was wondering if anyone has tried that, maybe using different oils?

(can be made with added butter as well for a truly natural spreadable butter, but I need a dairy free recipe).
