A challenge for you all

Options
Ok we are totally broke until Friday, I mean not one penny to spare. We have everything we need but I'm stuck what to do for dinner tomorrow night. I would like to put the slow cooker on tomorrow if possible.

I have a pack of fresh diced chicken
A tin of chickpeas
A tin of new potatoes
A tin of sliced carrots
Some stock cubes
Various herbs and spices
Not a lot to thicken a stew :( apart from some gravy granules
Red lentils
Olive oil and salt/pepper
Some sausage rolls
Some vegetable spring rolls
Sweet corn (frozen)
Peas (frozen)

Can anyone help? I'm sure there must be a dish here but I'm so poorly I can't think straight and just can't seem to be able to devise something.

    Hi, I would just throw the chicken and veg in the slow cooker with some of the lentils which will thicken it up a bit. Then add some gravy granules at the end if it needs more thickening. I'm sure it will be very nice. Either put the tinned potatoes in the stew or slice and fry or sprinkle with oil and roast in the oven. HTH. Esther x

    Loads of dishes there. I could eat well on that minus the crap rolls !

    Thanks shammyjack. Contrary to your opinion on my sausage rolls they are homemade ( by myself ) and sold in my friends farm shop, 100% pork. No crap rolls in this house!

    Maybe could roast the chick peas with the sausage rolls and sweetcorn on side and a soup with the rest. Springrolls as a snack with a sauce.

    If you are worried about the stew thickening up then I'd recommend doing it on the hob as then some of the liquid will boil away.

    If I were you I would pop the chicken into a saucepan with either a vegetable or chicken stock cube (if you've got one), add in the potatoes and some lentils, add some herbs (oregano/thyme works well if you have some or mixed herbs). Cook for around 20 minutes and then add in sweetcorn and your carrots and cook for another five minutes or so.

    I'd also have a much on those lovely sounding sausage rolls whilst cooking!
