I assume thay will only know your employment history as they will be able to access HMRC records. They won't know things about taking a career break or maternity leave which could explain genuine gaps in your employment history.
No they wont be able to access HMRC records of previous jobs because of the Data Protection Act.
When you leave an employer your PAYE record is closed , and when you start another one a fresh record is opened under the new PAYE reference number.0
