Yeast Question please

Hi can anyone tell me if there's a way to test yeast to see if it's still useable please? I have some stored in a compartment in the fridge (is this ok?) it has been open a long time but is still in date. I'd like to start making bread again but I'm never hugely successful (hence why the yeast hasn't been used up!)
& if anyone can give me a foolproof recipe for a nice white, light & airy loaf that would be great. Mine are usually quite doughy in the middle is that because it's not been cooked long enough?!

You can test it by adding 1 tsp of sugar and a sachet of yeast to 1/4 cup of warm water. Then, wait 10 minutes. If the mixture bubbles and develops a yeasty aroma, the yeast is still good
