Yeast Question please

Hi can anyone tell me if there's a way to test yeast to see if it's still useable please? I have some stored in a compartment in the fridge (is this ok?) it has been open a long time but is still in date. I'd like to start making bread again but I'm never hugely successful (hence why the yeast hasn't been used up!)
& if anyone can give me a foolproof recipe for a nice white, light & airy loaf that would be great. Mine are usually quite doughy in the middle is that because it's not been cooked long enough?!
Thanks in advance!

You can test it by adding 1 tsp of sugar and a sachet of yeast to 1/4 cup of warm water. Then, wait 10 minutes. If the mixture bubbles and develops a yeasty aroma, the yeast is still good :)
