storing root veg in sand

Just been reading a blog and a comment mentioned buying 25kg of root veg and storing them in sand. I have never heard of this can someone in the know elaborate for me, please?

Traditional country method of storing own grown veg, as in Potato Clamps.
Wouldn't work with fresh washed veg from a supermarket. The veg needs to be dirty and unmarked.0 -
You need a 1" layer of sand in the bottom of your container and then put the root veg in so that they are in rows but not touching each other, then cover with sand and put in more rows of veg and so on until you are a couple of inches from the top of the container then put in a last 1" of sand and cover the container. Check the veg regularly to catch it if one piece rots and stop it affecting the rest. Best to store the container raised off the floor (even on bricks is OK) to prevent damp from getting in.
