Decent set of chefs kitchen knives

Looking for a decent set of kitchen knives that will last a few years.
Have seen several brands of "Sabatier" but which ones are the genuine ones.
I do not mind spending a reasonable amount for something that is good quality and is going to last.

I was looking at getting some fancy new knives a while back, and did a bit of t’internet research.
It was suggested that you’re better off saving your money on big brand/big buck knives, and instead got a good edge on cheaper ones/whatever you’ve already got.
I ended up on a rather scary American (obviously…) website which appeared to be devoted to the art of knife-sharpening – you never know when you might need to head for the hills and survive on only your wits, and your ability to whittle…
Anyway… these weirdoes recommended the Spyderco system as the best one available (http://spyderco.com/catalog/details.php?product=77) and I managed to get one off eBay.
I went through every knife in the drawer, and was amazed at how sharp I managed to get even the oldest, dullest blade in there.
I’d definitely recommend trying this before you go for a set of Henckels’ professional chef’s knives (although if you’ve already bought a set, feel free to send them on to me…:rolleyes: )0 -
I have always used victorinox knives

Ask your local butcher for the local supplier, you will find nearly all butchers use them .
