I think you would need to go on the appearance and smell when opened. I've used it day after use by before

Look and smell. It may have gone a little white but as long as it doesn't smell 'off' then just ensure it's well cooked.

It probably won't be but certainly open it and give it a sniff and see.

The reason why it is unlikely to be ok is because it is minced and therefore it has lots of cut edges open to the air, which makes meat go off quicker. (and also because often shops take the meat which is closer to the use by date to mince, rather than put out whole on display so it was always going to have fewer days left on it than a piece of steak)

No I would not risk it. I suspect it says 'use by 7th February' rather than 'best before' best before is on biscuits and cakes and it just means the food might be slightly stale not bad, which makes an awful lot of difference ;)

As unopened and just 2 days over, another vote for the "sniff test" and, if OK, making sure that it's thoroughly cooked, which isn't difficult with mince.
If you fold it in half, will an Audi A4 fit in a Citroen C5? :)
  • Absolutely not worth risking. It's not often I would say that about OOD food, but every surface of that mince (and there will be miles of it) has the potential to carry bacteria now. I would risk a slab of meat if it looked and smelled OK, but never mince. Sorry!

    It's minced beef

It's be vacuumed packed with gasses to preserve it for a lot longer then you would want to know

Open it. Smell it. Touch it

It will whiff a bit, because most the blood will have drained and pooled. It might not look nice, pale or dark. But feel it. Slimey - and it's gone off

If you are pretty sure it's ok, then make sure you cook it thoroughly
