Safe to cooked dried kidney beans in slow cooker for a few hours

I want to save money by cooking with dried kidney beans rather than the tinned. I am going to soak the dried beans over night. Now I am not sure about the next stage... Can I then just slow cook them for a few hours in my stew and they are then safe to eat? I know kidney beans need to be properly cooked to be safe to eat. Slow cooking them in the stew would be so easy for me rather than having to cook them separately.

    They need to come up to boiling temperature (100c / 212f) for twenty mins to destroy the toxins.
    I used to be indecisive but now I am not sure.
  • No, not safe at all (sorry!). Dried beans need to be boiled vigourously for 15 minutes before longer cooking otherwise you will have a very poorly tummy. Kidney beans are the most dangerous in this respect.

  • It says on the packet that they should be boiled for 'x amount of time' before cooking.

    I use the pressure cooker (miss Vicky has a website specifying how long to cook different kinds of beans)

  • The pressure cooker is a wonderfull thing for this I also use a hotbox cooker, which really means I boil for 10 to 15 minutes then put the pan into a insulated box where it sits and carries on cooking for up to 8 hours but without the use of any elecrtric or gas.

    You really do have to follow the instructions for beans and they carry a posion. I am not really one for following rules but this is a must.
  • i have cooked dried kidney beans before as the packet says but find they are still hard ish not as soft as tinned ones
