Got the dream..... Now how to achieve it?!

Us- myself, OH, ( both early 30s) 1 dog, 2cats, 2 hens and 1 pony.
Our net monthly income £3500
Current house/mortgage situation
House purchased SEPT 2012 FTb
Purchase price £171k
Current mortgage amount £142k
Monthly payment £745
House soon to be extended - extension funded by 30k gift from FIL.
Then planning to remortgage - value roughly 230k amount owed 140k.
Hoping to reduce monthly repayments to around 550 giving the option to over pay.
Other money. Am expecting an inheritance of approx 35k sometime this year.
Currently have savings of around £6k (for when I need to replace my car.....hopefully not for a few years yet!)
No current debts other than mortgage.
However, imminent purchase of car which will be used for OH work.
(therefore high mileage, expenses paid but doesn't seem to really cover costs.)
Also pony costs 150p/month as kept at livery since moving house. (This is the cheapest I could find!)
Currently I have a final salary pension, OH just joining extra state pension arrangement.
Multitude of aims= to both be able to work part time/retire early (or at least before 60!)/ perhaps raise a family although undecided on this so far!
Any ideas (for what to do with inheritance/how to pay off mortgage early or reduce living costs/begin investing) are welcome.

Planning to overpay mortgage and don't intend to put any of the inheritance into the mortgage. Would rather have that as cash in an account somewhere.
My mortgage advisor is very keen that I get a buy to let using this money, but I am notin favour. The money would be locked away and I would be even more exposed to money borrowed/changes in interest rates etc.Current mortgage 133k
Purchase price 171k
Fixed deal ends sept 2019
Current repayments 640pm
Savings approx 60k0
