Emmergency Veggie option needed!

The person cooking a meal tonight has just pulled out because of a family crisis and the only other person who can get home in time to pull off a main course for 20 people is me:eek:.

~I'm planning to make an all in one meal of chicken thighs and roast potatoes http://www.deliciousmagazine.co.uk/recipes/roast-chicken-thighs-with-herbs-and-new-potatoes but not sure what to do for the two veggies.

Urgent ideas needed please! I'm going shopping during my lunch in about half an hour.

    Chestnut mushrooms, onions, crème fraiche and coarse grain mustard - easy peasy and quick!

  • Puff pastry tart/pizza.

    Get a sheet of already rolled puff pastry, cut into 4 equal size squares, roll the edges in/or fold them over about 1cm.

    Put seasoned tomato pure/or use a blender for a tin of tomatoes (season with a little salt and pepper and basil or oregano - or mixed herbs if you have them.

    Add almost any sliced veg that you have to the top - mushrooms (add raw), aubergine (pre-cook), broccoli (pre-cook), sweetcorn (add as comes out of tin/freezer), peppers (add raw), onion (can add raw or pre-cooked) etc

    then top with cheese.

    Stick them in the over, and can serve with salad or on their own.

    *ahem* there's a reason [STRIKE]lack of competence[/STRIKE] I'm going for an all in one dish:o. A method would be really helpful!

  • I usually chop and fry an onion, chop about 400 - 500 g mushrooms and add them to the frying pan once the onions are soft. Once they are cooked (but not overcooked) I add a tub of crème fraiche and a tablespoon of coarse grain mustard.


    Serve with rice (and some vegetables if you are doing some).

    If you have a jar of pesto, green beans, & new potatoes you could make pasta verde. Boil some water, add spaghetti and new potatoes cut in half, after 10 minutes add the beans. When cooked, drain and toss in the pesto.
