Rubber Chicken and other roasts

Ok, I'm fairly certain this will get moved to Old Style but hoping it won't as this is the board I feel most comfortable on.

I've found that since keeping an eye on my grocery shopping that I'm making good inroads into the mortgage.

One way to do this even better is to return to the old roast idea and using up the meat through out the week. However, my Mum never used to reheat meat as she thought this would lead to food poisoning.

I got a great deal this week on chicken so bought two. Now I have no idea what to do with it. I have one to freeze and the one I roasted today. We haven't eaten much of it and I really need a way to hide the darker meat as the kids will only eat breast meat.

Also it would be useful to know what others do with other roasts.

    Ive tried these before:
    Fajitas/wraps (use both brown and a little breast meat)
    Salads
    Sandwich fillers with a coronation sauce
  • Stir Fries
    Chicken Pie/Pasties
    Chicken Egg Fried Rice
    Risotto

    Roast chicken =

    Roast dinner
    200g of scraps for pie or similar
    Half a ramekin of chicken fat (delicious roast veg)
    Bones for stock

    In our house :)

    We roasted up a chicken on Sunday, and so far this is what has happened to the leftovers:

    - Monday: chicken & leek pie (you can hide the brown meat in this, they won't notice)
    - Tuesday: chicken curry (again, good for hiding)
    - Today: chicken mayo for lunch (I just shredded a leg up for this)
    - Tomorrow: I'm going to boil up the carcass and strip any meat that comes off and use that and the stock for chicken noodle soup.
    In a better financial position than ever before (thank you MSE!). Moved back to Scotland and now trying to keep debt-free!
