:wave: Custard, chocolate fondants, lemon curd, mayonnaise, hollandaise sauce, use them with the Ts burgers as a binder for meat balls, ice cream, for sweet short crust pastry (for a richer crust) and creme brulee:

You could freeze them: Place one egg yolk in each ice cube cavity of a clean ice cube tray. Add a pinch of salt to each yolk (if you plan to eventually use them in savoury recipes) or a pinch of sugar (if you will use them in sweet recipes). Freeze overnight until solid, then transfer to an airtight freezer bag.

Ours never lasts long enough for me to worry about that! I'd be wary of keeping it too long though, I wouldn't keep it more than a week.

You could make custard or whisk them lightly and freeze individualy or in 2s you can then defost and add to cake omellette or use for eggwash

I have a stash of yolk only recipes for when I make macaroons. Creme patissiere is a good one too.
