What to make with fridge leftovers ?

Options
I'm in need of some ideas/inspiration for evening meal tonight please :)

In my fridge & veg rack I have lots of small bits - one carrot, one onion, a couple of sticks of celery, a swede, couple of baking potatoes, half a pepper, about 100g of lentils (cooked), 1 leek, 1 large mushroom, 1 bulb of fennel, one-quarter of a savoy cabbage.

Now NORMALLY I would think about a soup or a curry, but we've had loads of those recently. Can anyone please suggest an alternative? (It doesn't have to use ALL the above, but it would be great if it could use up at least half, especially the lentils - which need using up).

Cheers !

Baked potato with a lentil and veg filling.
For myself I am an optimist - there does not seem to be much use being anything else.

If you were doing some sort of fried rice dish you could throw lots of things in. Or maybe a frittata (spl) or lasagne.

    • Vegetarian lasagne
    • Lentil loaf with carrot, onion , grated cheese and chopped mushroom bind with breadcrumbs or a packet of dry stuffing mix and bind with an egg.
    • Mash the swede with butter and nutmeg and freeze or use as a side dish
    • Finely chop the savoy cabbage for crispy "seaweed" Chinese style
    • Chop all veg and add to noodles with a Chinese sauce
    • Tear off leaves of the cabbage and fill with cooked rice and veg, roll up and steam until the leaves are tender
Blessed are the cracked for they are the ones that let in the light

Did this last night and it was lovely. Also added a tiny bit of fresh chilli to the mix (off my £3.50 plant bought in Tesco in June 2013, which hasn't stopped giving me chillies ever since).

    Thank you.
