Which date for completion on a remortgage?

I hope someone can help me,
I am remortgaging for the first time and my new mortgage lender wish to know the date I would like completion to occur on.
My existing mortgage deal ( discounted ) ends on 28th July and there is also an early repayment charge in effect up until this date.
Should I ask for the 28th July or 29th July or some other date??
I am also worried that I might end up paying twice in July, which I will not be able to afford.
Any help would be greatly appreciated,

I requested the day after my fixed rate ended and everything seemed to work out fine!! ie go for the 29th July, or 1st August if you like things neat and tidy...0
