I shall definitely be giving them all a try. Lots of new things to try and shall make a note to use up the mushrooms first (food bank didn't want em, probably because they do go off so quickly). Tomorrow's breakfast is scrambled eggs with mushroom and chard!

cleaned sliced leeks freeze well. you could parboil the parsnips ready for roasting then freeze them.
I love beetroot - but how on earth did you get fresh ones? its the wrong time of year? grown in polytunnels? still, they can be pickled, or boiled until 'just tender' and then frozen. they also make fantastic salads, just grated as is', I like them roasted too. and you can make leftovers into soup.
Red cabbage can be pickled or braised then frozen. I have a couple of bags of frozen braised cabbage in freezer leftover from Christmas. it only needs a splash of wine or apple juice to revitalise it and reheated in the oven.0
