Do i need to set up a business to be self employed?
i am about to become self employed offering my services to a company on a part time basis, i have heard that i would just need to invoice the company for the work i do for them and buy NI stamps from the post office to cover my NIC but when i tried to look into it online all i am finding on self employment seems to suggest i would have to start a business and register for business taxes.
any info would be greatly appreciated.

You need to register with HMRC as self employed. They will then arrange NI with you. (I doubt very much the NI stamps are still available, I know I used to do these 30 years ago, but not heard of them for so long I'd forgotten all about them till your post :-) ) So whoever is 'telling' you stuff is pretty out of date, so mind what other advice they give you.

When you set up as Self-Employed, YOU are the business. You will be a sole trader.
The advice you have been given is wrong. Please have a look at that link provided in the post above

If you are working for this one company only, don't set your own hours and cannot send someone to work in your place then your would not be classed as self employed anyway.0
