Hi again,
Does anyone have any veggie recipe ideas different from basic stir fries for use with frozen/pre prepared veg please? Or
I have been pointed to some fab broccoli/cauli ideas but wondered if there were any more favourites?
I am not veggie as such but am not a great meat lover and i also suffer from nausea quite a bit due to health issues. Veggie ideas always seem to be appealing and 'safe' for my nausea.
Although not greatly mse, I am asking about frozen things because my health issues mean I don't always have the energy to cook and end up with a takeaway! Which is neither MSE or good for me!
Any ideas would be welcome!

If you make things like curry, pasta with meat normally, you can leave the meat out for a veggie option (it's good to add some protein in the form of cheese, nuts, beans or tofu though).
E.g. instead of a chicken korma, I made one recently where I replaced the chicken with chickpeas (easy to use from a can) and cauliflower (which you could buy frozen/pre-prepared). Instead of cauliflower, mixed veg could be used tbh, or I like to roast veggies to shove in curry (but I tend to buy veg fresh, not sure if you can roast frozen veg).
I also make something I call "Spanish veg stew" which is justa combination of any veg you like (peppers, mushrooms, courgettes, carrots, sweetcorn, onions, sweet potato, aubergine and many more work well here), along with a tin or two of some sort of beans (usually chickpeas or white beans in this), cooked in veg stock with tomato puree, lots of garlic, chilli/paprika (smoked paprika is really good), and oregano and/or thyme. Serve with rice or crusty bread normally, though I have done it with mash and even mashed sweet potatoes. HTH.Part time working mum | Married in 2014 | DS born 2015 & DD born 2018

I make veggie pasties using any veg that I feel like or that is leftover with gravy or cheese , onion, curry, or parsley sauce depending on mood.
I made some last week using left overs..........mashed up roast potatoes, carrots, brussels and parsnips with left over gravy from the beef joint poured over and mashed in but not too much, you don't need sopping pastry, just enough so that the pasties are not too dry. DH and DS didn't even notice that there was no meat in thereBlessed are the cracked for they are the ones that let in the light

I boil some potato chunks, onion, carrots, peas and cauli florets then add to a cheese sauce and top with breadcrumbs and more grated cheese (in the oven for a bit to brown) to make a veggie bake, that's quite filling.
Aubergine slices layered with mozzarella and a tomato sauce is one of my boys' favourites
Tin of butter beans mashed up with some spring onions, salt and pepper and some cheese - the recipe uses wensleydale but I've made them with cheddar too. form into patties, chill for a bit then do the flour/egg/breadcrumb routine (panko ones are nice) and gently fry til crispy. They taste a bit like the cheese and onion fryits you could get from the chippy.Over futile odds
