Signing new job contract

I should be receiving a contract for a new job I've been offered this week - am waiting to be sent the contract before I hand in notice at my current job. Once I've signed and sent back a copy, should I wait until I receive a copy back signed by my new employers before handing in my notice or should I be alright to go ahead?

Also, I will be emailed the contract - is it alright for me to simply sign the last page where my signature is required and scan and send this back?
