Can/would you ask caterers to create new menu?

I've found a private chef who has lots of amazing reviews and the pictures of his food look very impressive... but the menu choices listed on his website, of which there are quite a lot, aren't really to our (err *my*, I'm a bit fussy) taste.
Is it ok to ask for different dishes? How can I phrase it without it sounding rude?! Could I give him a basic list of options we'd like and ask him to make them into proper-sounding dishes, e.g. we'd like a choice of a scallops or duck salad to start, beef or chicken for main, and chocolate or fruit tart for dessert.
Is this the done thing or would this irritate a chef? I know I'll be the one paying so should ask for what I want but I don't want to insult him!
ps - I've already checked availability & rough budget with him and he responded very quickly, so I've currently just said I'm discussing menus with my OH & parents. We're having quite a small wedding with <25 people.

Hi, I think that's exactly what he would expect you to say to him, he will prob have half a dozen suggestions for chicken main courses etc and then you can pick your favourite.

You're paying them for a service, so yes. You just tactfully word it if you are worried about sounding rudeDebt free other than a mortgage but still always wanting to save money :j.
