    I don't know how big they are BUT Larger ones you can use like spinach. Great in a veg-bake, quiche or soup with some onion, ,celery, potato and stock blitzed. Also, depending how big they are..you can use them like vine leaves and stuff them ;)

    Thanks Nordicat2. I really like the ideas of stuffing them like vine leaves and making a quiche with them :)

    I cannot believe how many times I have chucked these leaves onto the compost when we could have eaten them - I love beetroot and get through tons of it. Really looking forward to experimenting with adding the leaves to different recipes.

    I grow beetroot just for the leaves. You can pick and pick them for a good few months and the plants will often over winter.
    The birds of sadness may fly overhead but don't let them nest in your hair
  • I wish my beetroot crop had been better this year. I use the leaves, of any size, in curries instead of spinach.
