I have people coming at 6pm tonight, do you think if I pipe the garlic & herb cheese on my melba toasts now they will go soggy by then?

They will go soggy this far in advance. However, what you can do is put the mixture in the piping bag and shove that back in the fridge. That way, it'll only be a question of squeezing it out at the last minute when everything is busy instead of doing the fiddly bag filling while trying to make conversation and welcoming everyone.Better is good enough.0
