Beef joint already thoroughly defrosted far too early!

Hi, we are having beef for Christmas dinner.
My sister, who is an excellent cook, recommended that I took my joint out yesterday....
It has defrosted 24 hours too early !!
I'm thinking of cooking it today (Christmas eve) and reheating, once sliced, for dinner tomorrow.
Any other suggestions please?

It's 'shrunk' wrapped. Should I take it out of the plastic ?

I wouldn't. Just keep it in the fridge until 30 minutes before you're ready to cook it. Then remove it from the packaging and let it come up to room temperature.0

It will be fine - shrunk wrapped stuff keeps longer than other stuff anyway. I am cooking a lamb leg tonight on which the use by date says 22nd Dec. It is shrink wrapped. I am not worried
