Thawed out frozen food. Help!

I recently travelled from the UK to the South of France and took a fair bit of frozen food down with me in a cool bag with freezer blocks. Had hoped it would stay frozen, but most of the food had thawed by the time I arrived: it was still cold, but not frozen.
I gather you are not supposed to re-freezed thawed food, so I have simply transferred the frozen food to the refrigerator. Will it make me ill if I eat it on xmas day? It will have been in the fridge for about 48 hrs by this time. All of the food is vegetarian (there's very little I can buy for my xmas dinner that I can eat in France, hence having to bring it with me!) so I am hoping this will mean it can't go too bad if kept in the refrigerator.
Can anyone help? I really want to be able to eat this food as - well - I don't really have anything else

Is there things that can be cooked as you can re-freeze after cooking already frozen food.Lost my soulmate so life is empty.
I can bear pain myself, he said softly, but I couldna bear yours. That would take more strength than I have -

Cook it all... then nuke it hot on the day?
What've you got, specifically? It might be all right ..... but it's easier to know if we know what you've got.0 -

They will be being cooked, yes. I haven't cooked them today though - don't think it's going to be practical to do that tonight. Might be able to do it tomorrow at a push.0 -

Heh. I've put it in the oven now - no chance of me missing out on The Thing I Have Decided I'm Eating At Christmas (control freak).
But I'll obviously do that as well0 -
veggie stuff wont give you food poisoning after 48 hours defrosted i wouldnt have thought, as suggested though my approach would be to cook it and then reheat in the microwave when needed.Car Boot Queen!!

I've gone for the wussy approach - cooked half of them now and left the remainder in the fridge. That way I know I'll have some that definitely won't make me ill, but if I get desperate I can use the others too and suspect it will probably be fine.
My friends all laughed at me for doing this btw!0 -
2 days defrosted won't make you I'll! It has been kept cold so will be fine. I would keep things just in the fridge for over a week and wouldn't think it would poison us. It sounds like you will be having a lovely time, merry Christmas!0
