Christmas leftovers

Options
Hello there - I'm sure I've seen a thread on what to do with Christmas leftovers, but can't find it. Can anyone point me in the right direction or give me some pointers here?

TIA

  • Ok - maybe I dreamt it!
I quite like having leftovers, I'm thinking we'll have a fair bit. We usually have cold meat for later meals, I'm going to try bubble and squeak, I'm going to try to make stock/soup. Are there any other options I've not thought of? My attempts at turkey curry are usually disappointing ;)

I was determined not to throw any food out this Xmas and so far have managed this successfully. I find the meats easy to use in various ways and am making a mince pie fridge cake (a bit like rocky road using mince pies chopped up and mixed with some nuts, cherries and melted chocolate and left to harden in the fridge) and will made Xmas pud ice cream as well today along with a bread and butter pudding. The things I'm struggling with are:-
    Pâte
Brie - bought a whole one and only about a 1/3 has been eaten
Does anyone have any ideas to use these up apart from the obvious pâte on toast and Brie and cranberry sandwiches?

Brie makes a really creamy macaroni cheese - make sure you take the rind off though.

You could melt the brie like people do with camembert and dip bread/breadsticks/other bits into it.

That fridge cake sounds good! I have just used up my pannetone by making a bread and butter pudding with it. My favourite use of the turkey so far has been turkey fajitas.

Personally I don't care if I never see another turkey as long as I live...!
  • I had some roast potatoes leftover so I used them up in a Spanish omelette which everyone enjoyed. Soups are good, just throw everything in that's leftover, I didn't waste anything this year again :D

This reminds me of a conversation when I was at my daughters house and her OH's parents came to visit. They were talking about eating leftovers yet again and wanted to have a takeaway because they were fed up with turkey!! They had ordered a huge turkey - had fed 10-11 people on Christmas day and were now suffering the dreaded left overs!!
This year in true MSE style I drastically cut down on my meat order but because I had ordered from a proper butcher rather than a supermarket - the quality was superb.
I was shocked at the size of my turkey crown which to all intents and purposes could have been a humungous fillet!! But was delicious, moist and lasted for 3 days with both my cat and my daughters' cats having a few treats.
The beef joint was smaller too and once Christmas day was done was immediately sliced and frozen in gravy for a meal a few days later. My only gripe was the ham - it was delicious but this was gone in 2 days with everyone slicing off a piece when they walked past the fridge!!:rotfl: OH did a bubble and squeak with the leftover veg.
So next year the ham is being doubled because it will go in sandwiches and butties for work. Our only leftovers now are sweets which hubby will eat because I don't like chocolate, the different cheeses and the fruit bowl - so banana custard is on the menu tonight. The brie macaroni cheese sounds good - might give that a whirl too!!

Expect the worst, hope for the best, and take what comes!!:o
