Help with a Mincemeat Traybake needed please ........

I have a couple of spare jars of ExtraSpecial Mincemeat and want to make something that isn't 'traditional mince pie-ish'.

Years ago, I had an elderly friend who used to make a 'traybake' that consisted of Pastry, topped with Mincemeat and a decent layer of plain chocolate.

What I need to know is -

(1) 'is it OK to just grate the chocolate onto the top of the mincemeat BEFORE going into the oven to be bakes - OR would it 'burn'?


OR

(2) do you think this lady would have baked them with just the pastry on the bottom and mincemeat on top - THEN covered them with melted chocolate .......................?

Thanks for reading and fingers crossed that some of you possibly know this recipe.

  • I'd like the recipe for those mincemeat slices that you can buy in the bakers shop.The pastry is a bit like shortbread and caster sugar is sprinkled over the top with the mincemeat sandwiched in between IYKWIM.I have never seen the recipe and would like to make them as pies are a bit too filling for me

    I would bake the pastry with the mincemeat then let it cool, then melt the chocolate over a pan of water before pouring it on the top

    I'd do it the other way- grate the chocolate onto the hot baked mincemeat topped pastry :D
    Lily, why not try both ways & let us know how you got on :)


    **- Actually, just re-read original post & you say you want a decent layer of chocolate - think you have to melt it first then as you'd be grating for ages :D**
  • I would bake the base blind, then add the mincemeat and warm through or you will have a sort of mincemeat toffee on top of the base. Then I would allow it to cool thoroughly then add the melted chocolate

    yes thats the sort of thing.Down in the south (London) fly cemeterys were garibaldi biscuits :):)
    the mince meat slices were definitely what I was looking for I will try and make some this afternoon.I think my mincemeat may have dried up a wee bit so a dash of whisky will liven it up a tad I think :):)But only for the grown ups I think :):)Strangely enough none of my 7 grandchildren like mince pies or anything with mincemeat in.

    Why on earth didn't I think of doing two - one each way :doh:.

    As my mother continually reminds me, IF I ever decide to 'use the brain that the Good Lord gave me - I'd go much further in life :rotfl:!
