My lovely OH has offered for me to make some cupcakes for his work. One of which is a snowman cake. Does anyone have any tips to lovely white buttercream? Mine always tends to be a yellow / cream kind of colour. x

You can buy extra white food colour from cake supplies shops. Alternatively you can use something like trex rather than butter - doesn't taste as nice but keeps icing white!Trying to be a man is a waste of a woman0 -
Alternatively use white glac! icing and a marshmallow for a melted snowman effect.Trying to be a man is a waste of a woman0

This is the buttercream recipe I use, I think it was someone on here that recommended it to me. It always comes out white and isn't too sweet.

The lighter the spread you use, the whiter the buttercream will be- maybe try an olive oil spread. I use this receipe (to ice 12 cupcakes) which makes a very very light colour buttercream:
250g icing sugar
80g butter (or spread) at room temp
25ml milk
cple drops vanilla essence
mix the butter & icing sugar until well combined. mix the vanilla into the milk and then add it to the sugar/butter mixture a little at a time, beating with an electric mixer. turn the mixer to high once all the milk is added and mix for about 5 minutes. it goes really light and fluffy, mmm...

depending on how many cakes you need to make, you could use a jar of marshmallow Fluff. Super white and sweet- so yummy. I've seen it in most supermarkets- it's not too expensive. You could also try making your own- there are recipes on the internet. I think it's egg whites and hot sugar syrup mixed together with a couple of other things.

how about making little carrot cakes and finishing with a cream cheese frosting?
or
meringue frosting? 7 egg whites, 320g caster sugar, 75ml cold water in a bowl over a pan of boiling water, beat it slowly with an electric whisk until stiff peaks form. very, very nice- would be lovely with coconut cupcakes, i think mmmmm... quite expensive though, with all those eggs...
guess what i like making? you never will...0 -

half a pack of lurpak (it is the lightest colour butter on the market) and half a pack of trex, approx a teaspoon of a good vanilla extract, and icing sugar to taste. whip with electric mixer if possible for about 5-10 minutes will be white. this is a lovely light icing0

Try royal icing instead.Despite the name, I'm actually a laydee!0

use trex. my friend is a professional cake maker, this is commonly used for white buttercream0
-
If you use half trex and half butter you'll get a paler icing that still tastes nice. Whipping the butter well to add a bit of air into it before adding the sugar will give you a softer icing and also lighten it - if it is still too yellow you can add tiny bit of of blue food colouring and that rather oddly can make it look whiter.Common sense?...There's nothing common about sense!0

Probably too late now but Countrylife lighter is really pale0
