Saucy ideas for tortelloni ricotta

I bought a vacuum packed packet of tortelloni ricotta from Aldi which just needs boiling. Do you have any ideas for a quick and easy sauce to go with it? Thanks.

    If you're doing a tomato based sauce you've got any veg like carrots, peppers, courgettes etc slice them small and fry them off in a tiny amount of oil then throw them in the sauce and cook with it, makes it much nicer and of course healthy too.

    In mine I put one can chopped tomatoes, one carton passatta, one onion (also sliced small and fried off) garlic and a can of tomato puree then whatever veg, I love it with mushrooms, peppers and carrots but most things 'go'. Let them cook in a pan while I cook the pasta then throw in together.

    Oh and a little sugar or honey to take the bitterness out of the tomatoes :)

    We always find crushed garlic, onion, fried and then add creme fraiche or plain yoghurt a really tasty sauce for pasta, its great with added mushrooms and frozen peas or broccoli florets. I also use olive oil and balsamic vinegar, to which you can add chopped fresh or tinned tomatoes, you toss the cooked pasta in it and just cook for a few minutes. Hope this is of some use to you.     Thanks for all of your ideas. In the end I ate it with butter, salt and pepper and it was lovely! I'm going to buy some more for our camping holiday as it's quick and easy and yummy!

    Yes tortelloni, ravioli, cappelletti etc - ie, the filled pastas - should not be dressed with elaborated sauces which really suit plain pasta better. An excellent sauce is to just sautee garlic in a wee bit of olive oil then add some single cream and let it heat up. That's it. Calories galore, but the heart is happy. Sprinklle a bit of ground black peeper on it and you won't care. ;)

    Quasar, you might know this. The best meal I ever had was in Italy. It was pumpkin ravioli in a buttery dressing but it wasn't just melted butter. Any ideas? It was very light and the pumpkin was so sweet. Totally gorgeous.

    Hmmm I've heard of pumpkin filling. As for the dressing, dear o dear, there are sooo many... I wonder if it was a cream dressing? Or perhaps butter mixed with herbs such as sage or whatever? Which part of Italy was it? Each region has widely different specialities.
