I do this recipe for fish pie - makes its own sauce, you don't have to cook the fish in advance and has sneaky carrots in it! I think its a Jamie Oliver one or maybe a version of it... (sorry I don't weigh anything other than baking so I cant give quantities - you might be able to get these from another recipe if you need it)
Gas oven mark 5-6
Fish (your choice)cut into 1'' chunks
Grated cheddar cheese
Grated Carrot
About half a tub of creme fraiche
(Dont add seasoning if baby eating it - you can add salt and pepper to your plates later)
Put all the above into a deep oven proof dish and mix well. Top with mashed potato and maybe more cheese/dots of butter. Cook for 30 -40 minutes or until top is browned and fish cooked.
This freezes fine so you can put leftovers into little tubs for the freezer.

Do you eat all the same foods that you feed the 15 month old?
I love cooking and my boys 2 1/2 and 4 1/2 have always eaten what we eat. I did use jars with both of them for when out and about but they had homemade puree's too. they are now both pretty good eaters, although the youngest has his moments and the eldest has only just started liking the texture of proper meat!
When you say the other meals are out of the freezer, what sort of foods are we talking about!
You'll probably have heard of baby led weaning, from your health visitor! If not it would be worth asking them for some advice!
Does he eat cheese? Toast? Pasta?

Mine have always loved pasta in all it's forms - cheap and quick. Everything from just grated cheese on top, to adding tomato pur!e and cream cheese, to lasagne or pesto and anchovies. Maybe start by practicing a cheese sauce a few times? Delia online has a very easy one (low fat too) where you basically just whisk the cornflour into warm milk until as thick as you like.
