Using up too dry coconut cake

I made a couple of coconut cakes to use up dessicated co!!!! that was near its sell-by date. However, they have turned out quite dry and not that enticing to eat. I have frozen them for now, but will need to use them up. I am thinking
- trifle - mandarin will go well with coconut
- a cake equivalent of bread and butter pudding
- an unusual tiramisu

I have the perfect thing! My Mum-In-Law adds any cake scraps/crumbs to a bag/tub in the freezer and when she has enough she makes a bakewell tart and it is always delicious! I don't have her recipe (baking is not my forte!) but a quick look on google found this...
