Re-freezing salmon? Raw/cooked?

Hoping for some sensible suggestions!

In my exhausted state I took from the freezer what I thought was a packet of two salmon fillets for mine and my husband's dinner. However, turns out it is a pack of four.

I know I can't refreeze the spare two fillets raw.

I know the rule with meat is if you cook it, you can freeze it again. Presumably that is the sam with salmon?

However....if I cook it and freeze it again, what will it be like to eat? Is there anything I could use it in? I am really bad at shoving things in the freezer so as not to waste food, but then not ever using them and ending up throwing them away when I have a freezer clear out. So I have decided I must not put anything into the freezer unless I have a definite - and appealing! - plan for its later use.

At the moment, the idea of salmon cooked and then frozen and then defrosted and - what? - reheated? - sounds not very appealing at all! So anyone got any bright ideas for me.....?

    Poach the spare fillets until just cooked in a little water with a bay leaf, a couple of peppercorns & half a lemon if you have one.

    Allow them to cool and they will be delicious in a sandwich, salad or stirred through pasta or a plain risotto.

    Thank you - can I then freeze them do you think? And would they be ok going into risotto or pasta once defrosted? Thank you, this is exactly the kind of advice I was after :)

    How about turning them in to salmon fishcakes once they are formed with cooked salmon freeze the raw cakes until you want to eat them, then defrost and cook.

    You could use the spare two by making a fish pie which you could then freeze for another time.
