This may have been tackled before but I cant seem to get anything in a search!:o
I want to make some cakes and muffins but in batches of 4-6, I know reducing recipes doesnt always work and cakes are normally in ridiculous quanitites of about 20!! :mad:
Does anyone have any tips for this or know a recipe. I would be interested in a plain muffin recipe that I can add choclate chips to especially. Thanks!:D

why not just make more and then freeze them?
most cakes freeze really well and you would be saving time and money spent on heating the oven.;)

Hi boo,
If you are having difficulty finding recipes for 4-6 why not look for recipes for 10-12 and freeze half.
This is the recipe that I use for chocolate chip muffins. It makes 10 and they freeze well.
Chocolate Chip muffins
2 cups plain flour
1 tablespoon of baking powder
1 teaspoon of salt
1/2 cup brown sugar
1/2 cup sugar
2/3 cup of chocolate chips
1 egg
1/4 cup of sunflower oil
1 cup of milk
-Preheat the oven to 200 degrees.
-Mix the dry ingredients and wet ingredients separately. Add the wet ingredients to the dry mix and quickly spoon into muffin cases.
-Cook in the middle of the oven rather than lower down as they rise better.
-Makes 10 well risen muffins.

actually ive just never thought about freezing cakes, my boyfriend would be very pleased if I did though. I bought a muffin tin months ago and it needs to be put to use!

Yes, just substitute the chocolate for the blueberries. When I'm baking with frozen blueberries I just throw them in straight from the freezer....if you let them defrost they go mushy and the juice seeps out of them.

Oh good, that saves me remembering to defrost them then!
I wish I knew how they made them in new orleans, they were the best ive ever tried and had this lovely crumbly topping on them0
