Crispy duck

Hi,

I'm defrosting some crispy duck legs from the freezer and the instructions say to cook on a wire rack over a roasting tray, well I don't have a wire rack any ideas what I can do instead?

Can I just cook it in a roasting tray without the rack and it just won't be as crispy, lol.

    Medusasmummy, no I don't even have a grill pan. Oh dear it's looking like it might be soggy fatty duck for dinner, lol.

    Crinkle up some tinfoil and rest it on that so that it doesn't sit in the fat and you'll have lovely crispy duck.

    That gave me many happy memories of cooking duck confit in rented French holiday houses. Just what I needed on such a grey day. That's exactly what I've done. You can crinkle it or fold into a concertina shape, anything that lets the fat drain. Thank You.:)

    or, you can quarter a couple of small onions and rest the duck legs on those and you have the benefit then of a 'roasted onion' side dish. I do this with chicken legs and make the gravy with the onions and chicken fat.
