Is your current job school hours or 9-5? If it is school hours could you ask for an interview at 4 and explain that you are not in a position to ask for time off during the working day as you have not been in your current position long. That fact will be obvious from your application form anyway.

I am a school governor and have done lots of interviews for teachers, teaching assistants and admin staff. There is a convention that schools do allow staff time off for interviews even though in general holiday in term time is not allowed. I suspect this might even be something which has been union negotiated. However I agree with you it doesn't send a good message to your current school if you really are in the first few weeks of employment, so I would try to avoid doing it if you can.

If you haven't told your current school you are looking I assume you have also not put them down as a reference, but we would always phone the current employer after an interview if we were considering making an offer and didn't already have a reference in advance from them, and have occasionally in those circumstances been told by the current school that they had no idea the employee was looking for work and they had phoned in sick/pretended to have a dental appointment that day. In those circumstances we have never gone on to offer the job
