Hi,
I want to get my wife some of that really really bright food colouring that I think comes in either a paste or a gel but not sure what to order for the best, any advice from the forumites

Personally I would go for Wilton Icing Colours. They come in little jars and they're the gel type. Not the cheapest, but very vibrant and will last longer than the liquid type that the supermarket stocks.
You might want to google baking supply and cake decorating shops and look for the cheapest. I think they do a starter kit with about 8 colours in, or you can buy them individually.

If you have an Indian grocers near, try them - they do really bright colours in powder format. The powder itself doesn't look all that bright, but when you add something liquid the colours are really intense.0

+1 for finding an Indian grocery - and ask for help picking colours! You may find you are buying 200-300 grammes at a time, but as you'll be paying relatively pennies for them, indulge your good lady with a palate worthy of her talents!0
