Beetroot or pickled beetroot 'pate' recipe??

I'm absolutely mad about beetroot and am wondering whether it's ever figured in anyone's home-made recipe as an ingredient for a 'pate' or sandwich spread of some kind.
I'm trying to avoid meat/dairy/saturates so the possibility appeals to me.
I own a very high speed blender so will definitely experiment but maybe someone already has a few pointers to offer..?

Shame no replies. Well, there seems to be plenty of 'beetroot dip' recipes out there, e.g.:

Hugh Fearnley Whittingstall has a recipe for Beetroot Hummus in his Veg Every Day book which might be something you'd like?0

There's lots of lovely beetroot recipes on the BBC Good Food website. Even better are the feedback comments that other people leave giving suggestions of how to improve on the recipe. I have a free account on their website and bookmark any recipes that I've tried and like.0

I've not tried either myself as I find I don't really like beetroot except when quite heavily disguised!0 -

I love beetroot, and made this in the summer (with my own home grown beets, which sadly amounted to about 4!), and it was lush. Only had a small jar, and used what I had, white wine vinegar for instance, made it quite chunky too (didn't put it in the food processor as just wasn't worth the hassle for such a small amount)...couldn't get enough of it.
