can i make some goodies without going out?

have just been rooting around in my cupboard and have been gripped my a sudden need to bake something. unfortunately having looked up the recipes I seem to lack some of the ingredients that have been listed and wondered if any one has any experience of baking with just what you have. first thing was meringue. have never made them but love them. strangely enough I remember as a child they always had a chewy centre, but not found any have since. anyway I have icing sugar and eggs, can i just use granulated sugar as I don't have castor sugar. would like to make a banana loaf but only have butter, flour, bananas and sugar and a tea loaf with ingredients above but with the addition of a bag of mixed fruit that sell by date of may?? any ideas??

    Ive never used anything else other than granulated sugar for meringues. Home made ones would probably be soft in the middle, commercial ones never are.

    I would have thought you would need eggs for the tea loaf, if you haven't any just use the yolks from what is left over from the meringues.

    I never pay the extra for castor sugar. I just whizz normal sugar in the food processor :o

    Give them a try, it normally works out even if not how you expect it to :)

    I read on here somewhere that you can use white vinegar instead of eggs in cakes - anywhere between 1tsp and 1 Tbs apparently. Haven't tried it but might be worth giving it a try?

  • you could do some vegan style baking! I have made banana cakes before but they are a different texture..still tasty though! Can't find it online anymore but this is similar IIRC http://www.mumsnet.com/Recipes/i/3357-Healthy-banana-muffins-no-weighing-needed-egg-free
    I love food, hate waste and have a penchant for sparkly things ::D
