Question re Witnesses

Hello - quick question
I am about to re-mortgage and have a couple of forms to sign
Standard Security for Standard Mortgage and
Matrimonial Homes Declaration
I have to do this in front of a witness.
And was just wondering if this had to be someone particular (ie Doctor, Bank Manager, etc) or if a work colleague etc is ok enough?
This is under Scots Law if that makes any difference
Cheers for any help

I've very recently remortgaged with ING and phoned them to query this very thing. They told me it could be anyone as long as it wasn't a family member or someone living with me. My friend witnessed ours (in Scotland).0
