How to store peeled potatoes?

I seem to be peeling potatoes a lot recently, and I was wondering if it was possible to peel a bag at a time, and store them for throughout the week.

I have tried to put them in the fridge after peeling them, in a tight sealed food storage box, the next morning they was black! whole bag wasted.

Any ideas? maybe freeze them?

    I've kept peeled spuds in a bowl of cold water and some salt added. Put in the fridge and make sure the water covers the spuds.

    A good few days, not tried for a whole week TBH. The key is to keep them covered in water. Maybe do enough for 3/4 days and take it from there.

    Change the water daily.

    ascorbate acid can help in water.
    I think that's what chip chops use when they cut the chips before they fry them later in the day.

    As long as they are covered in water they will be fine. Just change the water every day.

    I normally peel a full bag and turn it in to mash, then freeze in portions. It speeds up midweek dinners.
