Does you always water bath homemade sauces etc

I didn't have any fruit juice in so didn't use it. Used twice as much sugar as the recipe called for - same weight of sugar as the weight of the apples.
So if I keep it in the fridge how long do you think it will last?

I decided to bag them up and they're in the freezer
thanks for all your help and advice everyone, I really appreciate it. Now to look into finding an affordable canner...
