I made courgette crisps last night

I found a solitary courgette in the fridge last night - I don't like them but decided to cook it for my husband.
I was re-heating some lamb stew in the oven and didn't want to use the stove. I decided to slice the courgette, lay it in a buttered earthenware dish and then I sprinkled some crushed cheesy cracker crumbs over it and stuck it into the oven at 160C.
Then my friend rang - fast forward 40 minutes later when I remembered the dinner and virtually slammed down the phone. The stew, veg and potatoes were fine but the courgette slices had shrunk and turned into crisps - they were gorgeous! And, because of the sprinkling of cheesy crumbs, ready salted

Must admit, with my accidental ones,some of the crumbs had burnt & I don't know whether they'd remain very crisp for long, but they were lovely0
