shortbread keeps burning

I wonder if anyone here can help, I'm having a bit of trouble baking shortbread :( I've tried 2 different recipes and each time the bottom of the biscuits has burned (although the top looks ok)

The first recipe was from Mrs Beeton, which recommended baking at 180 degrees fo 40-45 minutes, which I thought sounded too long, and sure enough the biscuits were burnt underneath.

The second recipe was from the BBC and recommended baking them at 190 degrees for 15-20 minutes but they still came out burnt on the bottom.

The ingredients I've been using are very similar to the Old Style recipe for shortbread:

I bake the biscuits on greaseproof paper on a baking sheet.

What am I doing wrong?

    I see Jamie Oliver's shortbread recipe calls for baking the biscuits at 150 degrees for 50 minutes! All the recipes seem to be so different.

    I normally don't have this problem when I'm baking biscuits, but for some reason the shortbread seems to be jinxed.

    Maybe too high in the oven, or your oven temperature is a bit skewiff at 180/190?

    Have you got an oven thermometer to check the temp with?
  • I would try lowering the temperature and only cook for 30 minutes

  • I have a fan assisted oven which can be a bit brutal on my baking and found for my shortbread recipe that 150c for approx 30mins - but keeping an eye on it got better results.
    Jan - June Grocery spends = £531.61
    July - Aug Grocery spends = £219.21
    Sept - Grocery spends = £ 32.53
  • I cook mine at about 180 for about 20-25 mins, I don't have it too thick though, about 1cm, so it doesn't need as long. I turn the tray half way through as most ovens brown more on one side

  • I have a fan oven and do shortbread at 160 for about 20mins.

    Have you tried putting the baking sheet on to another so it has a double thickness under the shortbread?
