I make an onion gravy rather than putting the onion in the batter. Fry the onions with the sausages, on a gentle heat so they go soft and sweet rather than black and crispy.
A hand held mixer will make the batter quickly and incorporate air to make it rise. I add the eggs last when using power tools and just mix them in, so as not to over process them. I have a Bamix and use the aerator disk - I get puddings 5 inches tall. A hand powered wisk will do the work but give you muscles.0
