Coleslaw - can I freeze it?

I have a big tub of coleslaw that needs using up before tomorrow. It says on the tub not to freeze it. Has anyone tried to freeze it or kno why it shouldn't be frozen?

Also,does anyone have any idea what it can be used in apart from the usual salads or baked spuds please?

I hate waste and its practically a whole tub :(

    Hi pixnmix, I think the vegetables would lose their cell structure after freezing and defrosting - they'd go soggy, or rubbery, I reckon (although I've never actually tried freezing coleslaw).

    I love a coleslaw sandwich - in nice big crusty rolls, or baguettes, with a bit of ham or cheese maybe.

    it wont freeze well
    you have the veg as mentioned
    The mayonaise is an emulsion so would likely split on freeze/defrost
  • Mayonnaise does not freeze well at all. We like coleslaw with almost anything. I make a pasta salad with it using pasta, sweetcorn, finely diced peppers, chicken, coleslaw and a little mayonnaise to loosen. top with cripsy fried onions or bacon pieces. Nice in wraps too or sandwiches. With pulled pork or on ciabattas with meatballs. With bbq chicken and in a tortilla basket topped with mixed beans or ratatouille and salad.

    as above its unlikely to eat well once defrosted.

    however if you want to put in the freezer if your only going to bin it anyway. Then give it a try. Worst that will happen is you still end up binning it.

    Googling brings up recipes for frozen coleslaw. I looked at one and it didn't contain mayo, which as far as I'm concerned is an essential.

    I too think the mayo would separate and depending on the size of the ice crystals, that the veg may mush.

    As a coleslaw lover I'd say out of all the many slaws I've tried, best is The Co-operative Tuly Irresistible coleslaw which contains cream and creme fraiche plus fresh chives snipped on top and KFC coeslaw is second.

    Coleslaw ideas.. omelette, coleslaw and chips, Cheddar and coleslaw sandwiches and um just munching it with a spoon in front of a movie :o
  • Use as a side with pizza and wedges, in cheese and coleslaw sarnies with omellette anbd chips as a side, or just plain eat it straight out of the tub with a fork on its own x

  • Have a look at the ingredients - pretty standard would be: Coleslaw = raw cabbage; carrots; onions + mayonnaise. If you're really not going to eat it today, and really want to freeze it, I'd rinse it through a colander to get rid of the mayonnaise then open freeze the veg on a tray. They should be ok dropped into a stew to bulk it out. I wouldn't attempt to freeze it thinking you're going to get edible coleslaw out of the freezer at the end of it, though.

    Ham and coleslaw or chicken and coleslaw sarnies are my absolutes favourite :)

    Rinse it off and use it to bulk out the veg in a stew/hotpot/pie/ soup.

    It will freeze that way, but does not freeze as itself. I know: I was offered the result at somebody else's house. Yuk.

    Thanks everyone for all your helpful replies. I used about half of it last night between a few forkfuls and then sandwiches for lunch today (2 of us). The rest i've rinsed and frozen the veg. At least my conscience is clear on the waste front. Big appreciation and thanks again for all your help :)
