looking for a plain sponge recipe other than victoria sponge

    Thanks I made this today I did a third of the quantities as that meant 1 egg and it was still possible using 1/3 cup measurements. I was very surprised how well this came out, the rise on it was better than I thought and 4 layers will make a good sized cake. The only problem was I wanted to do a rainbow cake, I tested blue colouring, it came out green :eek: I couldn't understand it, then I twigged yellow oil + blue = green lol. Will just have to be careful what colours I use.

    I used greek yogurt as that is all I had, I need to get some more, does the original recepie use plain yogurt, do you know if it makes a difference?

    I will also be trying that carrot cake thanks.

    If you are making a layer cake - I would go for a "Fatless Sponge"

    Always comes out really level on top for me - and a lovely tender crumb.

    I have used greek yoghurt in the past but now use cheapest natural yoghurt and it is fine

    Thank you! My carrot cake has never turned out well, even when the recipe promises easy-peasy foolproof results. Do you have to dehydrate the finely shredded carrots first?

    Nope, but wholemeal/gluten free flour needs a bit more liquid than standard flour.

    I did some carrot cake cupcakes for a Macmillan coffee morning with a recipe that turned out brilliantly too. I'll find it for you now.
