other half has been shopping a bought some stuffed lamb breast medalions.
any suggestions on the best way to cook them!

Is there no cooking instruction on them?
If they are medailons and stuffed I would think you just quickly fry them and then perhaps just let finish off in the oven...

Breast of Lamb is tough and needs long slow cooking as yours is already stuffed I would either put it in the slow cooker or wrap in foil and oven cook it on lowSlimming World at target0

I've never bought the medallions before, but I regularly buy the whole lamb breast which I prepare and stuff myself. I agree with the above that long slow cooking is the way to go.
