Cooking apples before making tart, do I need to let the filling cool?

Glad you found your recipe , I just wanted to add I never cook the apples just slice them raw, sprinkle with plenty of sugar and a little flour which thickens up the apple juice making it nice and moist but not soaking the pastry.#6 of the SKI-ers Club :j

I always cook the apples first, then let them cool while I make the pastry. otherwise you risk a soggy bottom!0

Thank you, oh I wouldn't be confident enough to not cook the apples incase the filling wasn't sweetened enough. I have lots of taste tests just to make sure! ;-)0

I'm another who uses raw apple. I just peel, core and slice. I put them into a plastic bag with some cornflour in and that thickens the juices up whilst the pie is cooking.
If the pie isn't sweet enough when it's cooked just put extra sugar on the top and in the custard!

I also never cook the apples first. I sprinkle the bottom of the pie with semolina before putting the apples in, and I sprinkle the apples with sugar and cinnamon. I always bake it on a metal pie plate and never have a soggy bottom

Another vote for not pre cooking the apples as I like a piece of apple in my pie, not mush. I made my first apple pie 50 years ago as a 17yearold new bride my Nan showed me how and I was OH so proud of it. used the same method ever since.Slimming World at target0
