Cake in Remoska

Am very excited. I've had a Remoska for several years but have never dared to do a cake in it. Today I managed to have the right size tin, all the ingredients and my big oven irreparably broken so I thought I'd try, and out has come a lovely-looking little fruit cake. Can't wait until teatime !
Here's the recipe I used - think I got it from someone on here - it's an attempt to make a cake like Mr Kiplings Manor House one:
Ingredients
8oz SR FlourFlour 8oz Granulated Sugar 2oz Sultanas 2oz Currants 2 tbls Mixed Peel(usecherries or extra sultanas if preferred) 4oz Butter 2 Eggs beaten 4 tbls MilkSugar for topping 7inch round tin lined with parchment Gas 4 for 1 hour oruntil inserted skewer comes out clean.
Method
Rub the butter into the flour and add the sugarand fruit. Add eggs and beat with a wooden spoon until well mixed. Add milk togive dropping consistency if necessary. Transfer the mixture into the tin andsprinkle with granulated or demerara sugar.

I make a lovely lemon drizzle cake in mine, I have the standard sized remoska and I usually add half as much of the ingredients again to get a good sized cake, I have some lemons in too so I think that I'll be making one very soon. So glad that I came on here today!
