Yes, I've got a receipe. I've never made it myself so can't vouch for it. I cut it from a magazine a few years ago and slipped it inside a cook book. I just found it when I went directly to the correct book, so I must have remembered it.
Serves 4
2tsp Olive Oil
2 onions, chopped
1 sweet potato
1 parsnip
1 medium turnip
1 carrot
2 sticks celery
1 clove garlic
1.5 litres chicken stock
400g cooked chicken
small bunch parsley leaves, chopped
Peel and chop all the vegetables (not the garlic) in a large saucepan heat the oil, toss in the veg and fry for a few minutes. Grate in the garlic and continue to cook for 2 more minutes - don't let the garlic burn.
Pour over the stock, add a grind of black pepper and bring to the boil and simmer for 10-15 minutes until the vegetables are tender.
Add the chicken to the stock and scatter in the parsley. Check the seasoning and serve.
As I say, I can't vouch for it as I've never tried it myself, but hope that helps.0 -
My own tip during winter is the holy trinity: finely chopped garlic, chill & ginger.
Spices up almost any soup and / or stew.0
