sun dried tomato oil

This is probably a silly question - but does anyone use the oil when they have finished a jar of sun dried tomatoes? And if you do, what for?

  • I use it in salad dressings, to fry the veg for pasta tomato based sauces, to drizzle over grilled veg like leeks and courgettes or even as a tasty dipping oil for a nice fresh crusty artisan loaf. It keeps for ages in the fridge, or rather it would if it wasn't so tasty!!! Hope that helps, Cheers Lyn x.

    I use it to stir fry cabbage with said sun dried toms. A little basil stirred in at the last minute makes it lovely.

    I like to use it either as the fat in savoury scones or in a tomato-based dish such as chick peas and veg in tomato sauce over couscous or a plain tomato pasta sauce.
