    I too have this problem with drying fresh pasta. Mine doesn't stretch and break, but when I hang it up it becomes extremely brittle once dry and very often will snap and drop onto the floor. I tried adding some olive oil to the dough, but it doesn't seem to make much difference. It never stays slightly soft the way fresh pasta is that you buy in shops?

    But maybe Noozan's tip of twisting the strands into nest shapes is the way forward for me too - I shall give it a go next time!
